My headcanon also suggests that FiM Europe would be populated by by various races. Some that may be similar to the ones living in Equestria. The Equestrian Ponies may even had roots in Pony Europe.

Then, what was with the Zebras as African and Buffaloes as Natives? And why do I always get the impression that Minotaurs in FiM would be from Russia, where they coexist with ponies as well?
 
Musk oxes as Eskimos equivalent would be cool.

We’ve seen one zebra as a witch doctor, and only the one group of buffalo. Saying that all zebras and all buffalo act like that is like saying all ponies are the same, which isn’t true.

I saw Iron Will as more of an All American Face myself.

Spike’s parents have thick Scottish accents.

Celestia and Luna do not actually raise the sun/moon.
 
The sun and moon work the same way the real sun and moon do. They just made it up in order to seem important and gain rule over Equestria.
 
Throughout Equestrian history there has been pony Copernican scientists that have discovered the true orbit but once they start telling it to ponies, the princesses imprison and/or execute them to avoid their secret being blown and starting a revolution.

Other people’s headcanons that have been incorporated into my own:  

Scootaloo is the next in the long line of Rainbow Dashes.
 
The name Rainbow Dash has just been handed down from pony to pony throughout generations

Luna will go nuckin’ futz if someone calls her crazy.  
Fluttershy loves eating meat far more than is culturally acceptable for Equestria.  
Celestia is a terrible fighter.  
Cadance thinks “crystal cancer” is a thing (it isn’t).  
Blueblood does more for Equestria than everyone thinks.  
There’s been an isolated monestary of unicorns trained for centuries to take over Sun n’ Moon duties for the day the Princesses can’t do it.  
There are very few humans left, but they’ve all become eldritch abominations from years of magic absorbtion and barely affect Equestria and the lands beyond for the sole reason that they prefer to watch them instead.  
Sombra and Luna are very familiar with each other, and Celestia would flip out if she knew.  
Fluttershy’s dad is basically a pegasus Nigel Thornberry, right down to the accent.
 
Those are a few that I like.

I almost wrote a fanfic about that, but then I realized I suck at writing.

I always sort of thought this one. I know people don’t like the “tyrant Celestia” interpretation, but it’s really hard not to consider Celestia an enlightened despot at absolute best.

The invasion of canterlot by Queen Chrysalis was not to gather love, as the queen said (not to mention that Changelings don’t even eat love) but actually to widen the changeling’s dwindling gene pool (hint: Shining Armor)

Before the first episode, Twilight was a very sad and lonely girl. She tried making friends (and even dating) in the past, but was hindered by social awkwardness and anxiety, so she gave up, as a result. She was also bullied for her poor social skills and the fact that she was Celestia’s student, leading her peers to call her “teacher’s pet”. Her books and studies were the only things other than her parents, Shining Armor and Cadance that brought pleasure to her. Seeing that her student is miserable and the fact that she needs to stop Nightmare Moon with the Elements, she sends Twi to Ponyville, and the rest is history.

Sombra gained alicorness by completing the ultimate spell of dark magic, which brings someone back from the dead. The reagents required are someone that loves you, and a much bigger crowd that hates you.
 
Dark magic has its base in anger, but branches off into other negative feelings such as hatred, fear, and grief.
 
Sombra used to have a big, black cyclopean dog named Shuck, who now roams as a spirit, searching for his lost master.
 
I have a lot of headcanon for Sombra.
