I would argue you go for middling quality. I wouldn’t pay more than $30 for a lab coat. I have a nicer one from Land’s End because it was on sale, but the cheap-o coat I have wears just as good. It’s such a light fabric regardless of material it doesn’t really bother me.
Also belts and big buttons are no-nos on lab coats. Small buttons are questionable but usually given a pass. It’s protective gear; you need to be able to get it off as quickly as possible. Snaps are preferable even if they don’t look as nice.

lab coats are not fashion accesories, but you must choose those of good quality, because you will be wearing it all day, every day, if you work in a lab. My favorite are those made with sturdy 100% cotton fabric, withouth the belt, big buttons and very long. And always ask for one number bigger your size, to be more confortable.
Fun fact: You can actually get designer lab coats. There’s a brand that specifically bills itself as being the lab coats worn by doctors on Grey’s Anatomy.
Instead I bought the cheapest cotton-blend coat I could find because it’s going to be covered in dye within a week.
