Aside from ponies, I don’t think the Apples ever saw anything else but Spike.
They had limited experiences to draw inspiration from.
They’ve never seen any of the bad guys the Mane 6 have taken on.
Maybe it’s because they kept him in a cage and were inspired to copy his form.
Hey, think of the apples as cells coming together to become an entire creature, and besides, I think the only monster they could think of in their seed sized brains was Spike despite being attacked constantly by vampires.
