Because it’s canon in the show Applejack works very hard physically pretty much every day of her life and is stronger than most ponies, so it makes sense in a more detailed artistic version of her would be incredibly built. It wouldn’t make much sense for her to not be really muscular, actually.
 
It makes more sense than manly buff Spike for example (he’s a pudgy little kid/baby dragon in the canon show) but we still see a lot of that here anyway.
