As someone who’s lived in the south for over 4 decades now, and mostly in small towns and rural areas, I can confirm that it is possible to hear “y’all” to refer to one person, but it’s extremely uncommon; I’d say at least 99% of people here use it exclusively for more than one person. “All y’all” is used to mean “each and every one of you”, as opposed to “some or most of you”.

Also people who use y’all often refer to one person with it, and use “all y’all” for more than one person

“Y’all” is short for “you all”, meaning “everyone in this group collectivly”. You do NOT refer to s single person as “y’all”.
 
Unless Applejack means that everyone who takes selfies looks like ducks. Which would be accurate.
