I’m a teacher, and yet the thought of having to take care of kids in my own home is mortifying to me. I can definitely identify with Rarity here.

I strongly disagree with you. Rarity is incredibly OCD and hates getting dirty. I can relate. The very thought of having to take on a couple of rambunctious filthy babies made her literally break out in a cold sweat, yet she kept her composure while turning them down. This is why I can identify with Rarity despite not being a fashionista. I dislike babies.
 
Rarity was being extremely pleasant, considering. She could have reacted like Fluttershy did when poor Luna came by to visit (scream and slam the door in the Cakes’ faces).

Well, do note the order in which the Cakes asked the Mane Six for help.

    Fluttershy takes care of small creatures as a living, Twilight and Applejack are both (generally) reasonable and responsible, and Rainbow Dash is loyal to her causes and doesn’t mind getting dirty.
     
    Considering Rarity’s near-irrational distaste (read as: out-and-out hatred) for “dirt,” I don’t think she’d be willing to deal with “mud,” so to speak. It’d be asking a person with acrophobia to go skydiving with you. It’s just bad juju.
     
    …they just thought she’d be a better choice than Pinkie Pie in regards to being responsible for babies.
     
     
    So I wasn’t surprised in the least when Rarity said “lolnoep.” I think her reasoning was understood here. She was just kind enough to not laugh in dismiss it. Instead, she had a physiological response (i.e., cold sweat) after briefly considering the prospect.
