Rarity’s shop was originally to be a carousel boutique, selling saddles and bridles and such. You can see why that never made it to the show.

Really, any saddle- or bridle-related thing they do is always going to come across as also being exhibitionism- and bondage-related, but the most obvious in-universe explanation for it is that it’s some kind of weird racial memory of ancient prehistory when they were used as steeds by [whatever], who no longer exist. It persists into the modern civilized world as a fashion element and for the same reason poodles get trimmed to a Poodle Cut; when you’re covered in fur, you really only need something to cover the kidneys (and maybe lungs) to stay warm, especially if you can then add a hat/scarf/quad of boots if it gets even colder.

That’s one thing I miss in the later seasons.  
The little “they are still horses” bits that used to be so prevalent.

Oh god the cute horsey things they did in season 1…it’s the little things like that I miss.
