The hippogriff part or the fact that he has two mommies?
 
Either way, in a world where magic exists, I don’t really have too much of a problem with it. Hippogriffs are no weirder than normal Griffons. They’re both mixes of multiple animals.
 
Also gender changing spells have implied to exist in the Alicorn Amulet episode so I just think that same sex couples go to a talented unicorn that knows that spell to temporarily switch sexes of one of the partners so they can conceive a child.
