Only her front part has bird anatomy, while the back part has cat anatomy; in my fantasical science canon, I believe griffons possess a respiratory system more closely resembling a the aviary sacs system, which is essential for helping those mythical creatures fly; mammalian lungs are not efficient in helping provide necessary huge oxygen fuel to maintain flight
Hence, if she were to sweat like a normal feline, that means she would not have the avian lungs to help keepher body temperature down, and hence has no way to maintain the sufficient metabolism needed for flight.
