Time only makes them bigger and stronger, and they remain like that until the moment they die.

Head-canon: Dragons don’t die of old age. Instead, as a dragon ages, they sleep for longer and longer periods of time at a go. Afternoon naps turn into multi-day sleep sessions, then sleeping for weeks on end, then months, and then years. A truly ancient dragon may sleep for centuries at a go, for all intents and purposes “dead” to the world around him. Except that he’s not truly dead; there are those rare moments when he may awaken and rampage a bit before going back to his sort-of eternal slumber.
Well, they die, first off.
And their power seeps into the ground as they decay, causing all manner of magical environment changes for centuries afterwards.
