Your explanation, worded a bit calmer on EQD has, at least in my opinion, a point. I haven’t seen it from this side and now her behaviour is completely understandable for me. So, thanks a lot for telling.

AJ is confident in her home town.
When she made the first attempt at moving to manehatten, she had childish wonderment, but when the lifestyle clashed with her desires, she returned home. The second time, she was there simply to sight see and see a play with her best friends.
However, THIS time, she was sent there with the purpose of being a “hero” and fixing a problem. This is an alien environment to her, one she already had experience in not feeling “at home” in, and now she was expected to do some “hero-ing”.
That’s a lot of pressure for ANYONE.
It seems to be a thing with Rarity/Applejack. In their IDW comic together Applejack was stressed out and finicky and Rarity was totally calm and going with the flow.

But that doesn’t make sense, AJ is by nature a very confident pony. Plus she stated herself that she was concerned that she wasn’t used the pace of life in the city.
It’s different when you’re a kid going to the “exciting new city” to see new folks, but also different when you go to the big city to see a fashion show put on by a very close friend.

Eh, I suppose the rebuttal to that would be that she wasn’t one of the primary focuses of that particular episode, so it probably wasn’t the most ideal occasion to present it.
Admittedly though, I still need to watch the new episode, as of right now it’s hard for me to ascertain exactly how nervous she was or what the context was, I will get around to watching it later.

Contrasting her behavior in “Made in Mahehattan” with “Rarity Takes Manehattan” is definitely more logical; still, given that (a) we barely spent any time with her in RTM, (b) she was with a group of friends in RTM as opposed to just one friend in MiM, and (c) her feelings about Manehattan in MiM seem plausible to me (a small-town resident who’s also ill at ease in big cities), the inconsistency didn’t really bother me.
(And let me add that I can understand someone being bothered by that inconsistency, but arguing that everyone else should likewise be bothered by it strikes me as very presumptuous. Not that you’re making that argument, but OP seems to be.)
She didn’t seem to have a problem in “Rarity takes Manehatten”. And I don’t believe this visit traumatized her so much that she got anxiety.
Except that lack in continuity it was a nice episode.
