Actually I uploaded this for use ina comment on a story, which gives a perfect explanation: They’re using the same hoof gripping ability that they use to pick up objects.

But is it just magic, or a surface texture like geckos and bugs? I remember a comic where Apple Bloom looks closely at her hoof and sees the fine scritchy hairs, but I can’t find it…
