I imagine it’s because Rarity’s melodramatic breakdowns are so over-the-top adorable that we always get a good laugh, and at the same time want nothing more than to comfort her. Just looking at the original scene too and ask yourself how this can not instantly seize the imagination of the fans.

I know that. What I’m asking is why there are five pictures of this scene. Is the fandom just so big that you can point to any element of a given episode and expect it portrayed by pony artists around five times over, or is there something particularly about Rarity crying that she was only trying to restore lost art - and if the later, what is that jes ne se qua?
