Well the Demo’s not a drunk either.
He just does it for the job.
Yet she herself is not an alcoholic and she doesn’t like to blow things up; since when in the show has AJ ever used explosives?
Honestly, I still wish that Pinkie and AJ’s classes were swapped in this comic, like Metal-Kitty said, because even today Engie Pie and DemoJack still make absolutely no sense when you look into their characters.
A drunk who works in the family business who is very silly and likes to blow things up.
And a farmer who works in the family business who is very silly and sells alcohol.
And in what way does AJ resembles Demoman?
Hell, Pinkie resembles Demoman even less!
Oh and BTW, just because Pinkie has a bunch of gadgets does not mean she qualifies as Engineer; we don’t even though if she built all those things.

Because AJ isn’t a genius like Engineer, and doesn’t build things.
How are those opinions? In Apple Family Reunion, Applejack clearly spends the entire construction of the barn singing… at best giving a few instructions. Sure, we see her put the finishing touches on a make-shift raft as well, but we’re not entirely sure if she built that herself or if she had help. Far as we know, Rainbow Dash might have better building skills than Applejack… no offense to Rainbow Dash.

Since when did Applejack like to fix things? She’s helped build a raft like… once. During the Apple family reunion, she sang while the rest of her family restored the barn.

Plus Pinkie is potrayed as being slightly chubby. So the Level 3 chin works with that better than Applejack with her Applebucking thighs of steel.
Another reason this artist chose Pinkie over Applejack for the Engi is that AJ’s more of a “get out there and do something” kind of character.
Sure, you have the occasional Battle Engie, but most Engi gameplay consists of building and maintaining a nest. Plus, PinkieSense explains how Pinkie can detect if her buildings need repair/if they’re being sapped.
I think it kinda fits. Think about it… Pinkie hides things around town (sentry ambush), uses contraptions (buildings), pops up just about everywhere (teleporters) was raised on a farm and is potentially an apple family memeber (southern items), and is probably nutty enough to saw off her own hoof and replace it with a mechanical prosthetic.
As it should be. No fuss over who says what.
