In my head-canon, Celestia and Luna are descendents of Princess Platinum and the line of Unicorn Kings and Queens in ancient times. However, there are other Unicorns, like Blueblood, who can claim descent from the old royal line.
When Discord conquered Equestria, he abolished the royal line and made chaos out of it. After he was overthrown, no one was really sure how the line of succession actually went anymore. So, Celestia and Luna took the throne as Princesses rather than Queens, out of respect for the other Unicorn claimants.
She would have, if had not been for Hasbro. (Seriously, people still think that Queens are evil.)
Which begs the question. Did Luna and Celestia just randomly pick a title when they became rulers?

“Give it another thousand years or so.” Celestia “I’m sure they’ll get tired of calling us Princesses.”
