I’ve yet to read Journal of Two Sisters but we can explain these inconsistencies as due to different creative teams working on different projects largely independent of each other. Clearly Hasbro did not put down a universal edict on how these characters should be. They more or less have free rein on how to portray these characters so long as they stick to the basic character bios.
It’s like Transformers, ever since the original G1. While they followed the original character bios written by Bob Budiansky, the writers of the Marvel comics and the writers of the Sunbow cartoon have the creative freedom to portray the characters in the way they need.
Another example is in Supehero comics, where there are multiple writers writing for the same character across different books. So Grant Morisson would write Batman in one way and Paul Dini would write in another while still basing on the basic, universal characterization of Batman.

So interesting thing, before he showed up in the show. Between how the comic made him kookie.
The Journal of Two Sisters had him overly serious. Now, that could seem like inconsistencies. But the Journal was still when the Princesses were young.
Clearly that is a long time to be around even if he was frozen in time for most of it.
The Journal mentions near the end that he started changing. Not only looking like he got younger. But knowledgable about future events he wouldnt share.
My theory? Living extra long lives with whatever time travel spell he was using had serious effects on his demeanor and mental maturity.
Shame the TV show wrote most of it off. Though, for normal viewers it wouldnt of made as much sense for a weird wizard.
