Catastrophic loss of cranial blood pressure from having all the blood vessels in the neck severed would cause the guillotine victim to pass out immediately. The head may live for a minute or two, even have physical reactions (eyes blinking, mouth and tongue moving) but the victim would be unconscious.

I mean… You obviously wouldn’t be able to breathe or speak, due to your vocal chords being severed and your lungs still being in your body. But wouldn’t the head (at least theoretically) still be able to feel, hear, see, smell, taste and think?

I hear that someone who was executed by a guillotine could have their head survive for up to a minute or two post-decapitation,
