I just see a lot of projection coming from you rather than a well thought out character analysis.
You generalized conservatives in the same breath you criticized Texan stereotypes.
No one thinks all Texans are Christian conservatives. But looking at this from the context of a show that is made of stereotypes (I love the show, but it is what it is), I find it silly to not assume stereotypical features of a character. Just my opinion.
Texan? Yes. Christian? Sure, maybe. Evangelical, conservative, or die hard Republican? Not likely. First off, Applejack would probably be of the mind that a lot of the megachurches are no better than Flim and Flam. If she were religious, and that’s not guarantee, she’d be more likely to be Lutheran, which are actually about evenly divided in party affiliation. Second, she represents the ideal of family values. Note that is the ideal i.e. empathy, caring for others no matter what, letting others into your home and into your family despite differences, not what many conservatives seem to think family values mean. Applejack would be appalled at how the religious right has twisted the words and their meaning to suit their own goals.
Not everyone in Texas or in rural areas is a stereotype.

Guys, Texans are just people. And sometimes, really nice people. Or, maybe person, singular… I have a friend from there. But don’t be throwing stereotypes onto someone like that. It’s really not fair to all the good ones.
Anyway she’s not a Texan, she’s obviously an illegal immigrant. She’s not American, she’s Equestrian, and she hopped over through a mirror.
Not sure I could rightly place her denomination like that, but yeah. She’d be a Christian conservative for sure.
