Matthew does not know what he was capable of and it’s only the ability to learn fast which makes him a genius, Matthew only knew of Griffin from a pony and search his way to find info of him and does it fast because the town he was in was near by and news spreads while some still remain local (like the Jekyll and Hyde story in this world) while the story of an invisible pony is more interesting or a story about a skull faced pony love story is more interesting and dramatic
 
Also Matthew is only a simple pony still just because he’s a genius does not mean he’s like a superhero, also Griffin is not a ghost he’s an albino if he was a ghost he would of been transparent and won’t feel pain since ghost are fully dead I still come consider Griffin undead but he can still feel pain

so matthew wants to apprentice with a master craftspony in order to have an excuse to get him and his mother out of the workhouse. being a genius, matthew’s probably as capable as a master himself, but has no reputation as such, nor any chance to gain one, because the rich victorians were powerful enough to fuck over poor people. but matthew does know of a master craftspony who would have apprenticed him, if the guy was still alive? and this pony was a ghost for some reason not yet specified?

Wait I thought you ask it did not go as you expected but oh well anyways it just depends if it’s not like a zombie them the reanimated person (pony) will act normal but I still say they can be immortal or still considers undead
