We just didn’t see her enjoying it because she was gasmin’ offscreen so much.

If we assume every episode left has a character focus, then that leaves only three episodes to focus on secondary characters.
Presuming that, we have had two episodes focusing on the CMCs (One Bad Apple), and another focusing on Scootaloo; with one known one in the pipeline (for spike), leaves us with only 6 episodes to focus on the mane six.
If that is the case, then in theory, we should get one episode focusing on Rarity, or at least one with her as a split ticket.
