Well, he did interact with Shinning Armor… By swallowing him and giving him horn herpes instead of killing him. It’s not like Shinning fought him and got away: Sombre had him in his grip and let him live for no good reason.
 
The Lich on the other hand can clearly Curbstomp Finn and Jake in direct combat, and hasn’t just killed them for excellent reasons (rushing to reach his Well of Power/The Time Room). The sweater thing was kind of an asspull, but I thought it was intentionally ment to be bittersweet in hindsight when Finn tries to get over Bubblegum.
