Which of course is no problem so long as they’re polite, but with her ‘telepathy touch’ if she ever touches one when they’re “thinking” about her, what will Sunny do about it?

You’re not wrong. Anime/manga quite often has its characters eyes display through hair/glasses if they would otherwise be partially obscured.
Personally I’m so used to seeing it that I don’t think twice about it.

My only critique is that the eyes need a bit more shading. The shading of the eyes is way different from how it originally was in the sketch, and it kinda alters the feel. It looked more natural in the sketch. But thankfully it’s a super easy fix to make. ‘3’
I’d love to see that, especially if, say, Rarity starts to get jealous.
If the show had a wider latitude for possible content, that would make for an interesting episode premise.
Heck, they could even still do it if they limited the “thoughts” to just them being innocently lovey-dovey for her.

Am I wrong in thinking that it’s a stylistic element taken from anime/manga?
A lot of artists seem to do the “eyes clipping through hair” thing. I think it’s intentional.
Two nitpicks:
