Flash being the one who thaught her is also nothing more than a headcanon.  
As long it hasn’t been mentioned how she learned it, she could have learned it in literally every way and because every reason.  
But if you want to look at it as “Sunset can play guitar because her boyfriend back then happend to be able to play”, just like 99% of the fandom does, fine for you. But to me that’s just too boring.^^

You just found out exactly why she would want help from someone else that she sees it as a tool, she was using him, therefore he had some worth to him. Learning certain things from him was one of the best ways to get more info on this world without seeming suspicious.
 
After having hobbies, once again she doesn’t really have any interest in those kind of things at first since she’d see them as mere distractions in her pursuits. The only real hobby she’d ever indulge in is studying, studying, and more studying.
 
Again, stop being so quick to discredit Flash’s involvement in her past.

Also, I do not like the idea that Sunset’s “helplessness” was the reason he got interested in her, because this was one of the reasons he got a crush on Princess Twilight as well, and it would made the whole thing between those three more weird than it already is. ._.

Sunset is a smart character, who prefers to figure things out on her own and does not really like to get help from others.  
So, why would she want to get help from someone she only sees as a tool, especially since her plan did not seem to contain guitar playing in the first place?  
In Rainbow Rocks everyone was surprised that she was able to play, and she also seemed to not care about other school events except the Fall Formal back then, therefore it is save to assume she never did it in public.
 
 
And again, if she was learning how to better use her fingers and possibly earn money, why wouldn’t she learn from the only one willing to be near her and hang out with her?  
About 10 years ago Flash would have been not older than 6 or 7 years (while she was probably a teenager already). I do not think that they meet right after Sunset came right through the portal anyway, and learning guitar to use her fingers better would make no sense years later.  
And again, just because she was power hungry does not mean she was not allowed to have hobbies.

You claim that such an idea is obvious and on creative and yet you do everything in your power to make it even less creative by simply claiming that she somehow knew how to play herself.
 
You keep claiming that she would have been able to teach herself which doesn’t make much sense since by all logic she would have learned from Flash because he was more skilled than her at it, and she would. And Flash falling for acting doesn’t make him retarded, he was most likely drawn in by how helpless he seemed at first and eventually wised up to her true attitude and left her.

Because, in my opinion, Sunny and Flash deserve better than the most obvious and uncreative backstory people can think of for those two.
 
I personally do not believe that Flash is so retarded that he would fall for Sunset’s terrible acting. After all, we can she how “great” she is in that field during the first movie.  
How he got portray so far also tells me that it was most likely him who wanted to get to know Sunset better and who asked her out, and seeing that they actually share the same hobby/, or in the case of my headcanon, knowing her from his past, would have been a good reason for him to get intersted in her.  
And of course Sunset would use this then if it helps her.
 
 
But your “someone like her” tells me already that we see those two characters in two differnt lights. You probably think that Sunset was this power hungry bully from the movie the entire time she spend in this world.  
Well, I think that her survival in this different world without any magic was more important to her at first, and that her hunger for power started to overtake her again after she started to go to CHS and was winning the Fall Formals.  
As I mentioned before, at the time of the first she has probably been in this world for around 10 years(the reason for that being simply Twilight), and learning how to play guitar would have helped her to gain better control over her new body/hands faster, and later in earning at least a little bit money.  
(Also, I do not see a reason why she is not allowed to have music as one of her hobbies. Learning an instrument is also a form of studying, and would fit to her as well, since she said herself that she prefers “learning by doing” over reading books. Not to mention that the reason why she did not like their musical number was clearly Twilight.)
 
Another reason, why I do not think that Flash thaught her would also simply be that I do not believe that they spend much time together during their “relationship” or that it lasted for long in the first place.  
I think of their “relationship” as pretty one-sided. Flash being the one who actually cared and wanted it to work out, and Sunset only pretending (or in her case more trying to pretend) to be his loving girlfriend, but otherwise wanting to be as far away from him as possible. After all, to her he was nothing but a tool, so why spending more time with him than needed?

Again, she’d have no reason to want to teach herself, someone like her wouldn’t be interested in music and see it as just a waste of time. Her attitude towards the Humane six’s musical number is proof of this. The fact that she said she was using Flash indicates she needed to at least act like she had the same interestes as him, and being taught guitar by him tended to stick.
 
Why are you so desperate to discreet Flash?

It just feels that way. Plus there’s the fact that all those alternative ideas you keep pointing out get contradicted by Sunset’s attitude during her phase as a bully, Flash is literally the only character whose remotely close enough to her to teacher her that kind of stuff.

Why would she care to learn though? She obviously wasn’t interested in it before she became friends with the Humane Six. She’s more focused on taking control over the school, she wouldn’t have had any time or intent to practice music.
 
It feels more like you’re looking for excuses to discredit Flash just because you don’t like him.
