I do like the idea of Sunset as a Black Knight (cowboys are often touted as the knights of Americana, after all) of sorts, a wandering rogue unbeholden to any written law but who believes in upholding the spirit of good will and justice for those law has abandoned.
 
Hell, double up on it and have one of her mentors in the human world turn out to be Undertaker!
