One thing that I see a lot that most people seem to assume is that the changelings are starving, or in danger of dying out.
 
Allow me to quote Chrysalis herself:  
“…and as queen of the changelings, it is up to me to find food for my subjects. Equestria has more love that any place I’ve ever encountered. My fellow changelings will be able to devour so much of it that we will gain more power than we have ever DREAMED of!”
 
Invading Equestria was NEVER just about finding the next available scrap of food just to survive - it was about gaining power. A vampire needs to feed off blood to survive, but this vampire has his sights set on the blood of a king.
 
That’s my perspective on the whole “attacking Equestria for food” deal, at least.

Yeeeeeah - because Ponies have been soooo accepting of other races in the past. And though they may have come to accept them those races generally didn’t look like they stepped out of pony horror and didn’t have ‘suck the love out of ponies’ as a feeding method.  
I don’t think diplomacy would have flown too well.

^That is probably easier.  
If the way that would work is to corrupt ones love for another, then all it would take to retain your mind is to realize the corruption is full of bullshit meant to make you a pawn and ignore it.
 
Personally if something like that was real and happened to me it would probably stop a third of the way there and stay there.

Because it would make too much sense. I often wondered why Chrysalis didn’t just attempt diplomacy with Equestria. I mean “Hey, my subjects are starving, we need help.” would play right into pony sympathies.

^I imagine it would be something along the lines corrupting love of the most important pony to someone.  
If that’s so then it would take something along the lines of how twilight read her letters to celestia after being discorded to stop it or reverse it.

Um, I have to take a moment and criticize the changeling’s tactics.
 
Why can’t they set up a stealth operation where they drain away ponies’ love without them knowing? Like some sort of underground system of roots that drain away their love from right out from under their feet? It would seem to be less cost effective than storming a country’s capital to replenish your only food source.
 
Also. How hard would it be for a pony to keep their state of mind when being transformed in this way?
