Is it because of Coyote vs. ACME?! I would love for that movie to see the light of day, but let’s not drag this unrelated project down. This movie is a good opportunity to show that 2-D films should be in theaters again.

The various Star Wars games are sort of to blame for the “the dark side is just a more evil side of the coin” thing in lore.
It’s meant to be wholly corruptive and destructive, a manipulation and perversion of the Force.
The games, especially ones that give you a choice between light and dark side, have skewed the perception that the dark side can be safely wielded, and that it’s part of the “balance” of the force.
It’s not. It’s basically a cancer that you leverage for super powers but will slowly kill you.

The answer would be “it depends”. Sith are noted as being able to “start late” for example. Sith don’t really do “younglings”.
During the reign of The True Sith Empire, for example, initiates were pulled from anything from lowly slaves on Koraban to the children of nobles on Dromund Kaas. Kids, teens, adults, didn’t really matter. With many getting to “Jedi levels” of power in just a few short years.
