Oh, so this is one of those “single person commissioning everyone” kind of things.
Just wanna point out that Maud and Trixie meeting “in the show” is sort of implied when Trixie explains that she had spent some time at the rock farm, where Maud lives. It might have not actually been an episode, but the idea is what made the possibility so intriguing (I’ve done a picture of the two girls together in an art book).
Luna x AJ pairing, as far as my work is concerned, is all thanks to a wonderful commissioner by the name of Holi. I’m not aware of anyone else who pushes this ship though. I’ve seen him get commissions from other big named artists though! He’s very dedicated to these girls.

Mauxie is a special case. At least Luna and Applejack met in the show, while Maud and Trixie didn’t, and despite that they have triple the amount of fanart.
Almost every possible ship has at least a few artworks, even the obscure ones. Some, like Mauxie, explode in popularity when an artist devotes him or herself to that pairing.
