Very good point about the counterweight/tripod effect. And sticky hooves could definitely be a factor for pony!Octavia.

They both have three points of support and the third is a counterweight against falling back.
Plus earth pony magic might be in play, same as with Octavia managing to hold a bow and press on the individal strings with hooves.
