/mlp/ has a running thread series about that, called “Princess Applejack”. Basically, the premise is Celestia makes Applejack a princess because she actually understands that a princess needs to do practical things like administering the realm rather than going off adventuring.

I actually really like the idea of Applejack becoming mayor of Ponyville. She really needs some good character development and this would be a great direction to take her in.
 
If nothing else, it would be nice to have AJ episodes that don’t focus on her family.

If we’re honest here, Applejack’s personality traits predispose her to being a better leader than Twilight Sparkle, in terms of personal experience, people skills, and natural common sense. She’s already portrayed as widely respected and loved within Ponyville before any of the crazy world-saving shit, and there’s a reason why, in the show, she is almost always second in command, the defacto leader when Twilight isn’t around. On a few notable occasions in both the show and comics she even turned the group against Twilight (although most often out of concern for her). True, she’s fairly independent, headstrong, and doesn’t have as much faith in herself as she projects (if The Last Roundup is considered) but everyone has their shortcomings and those are fairly forgivable ones in a leadership role.

Next issue is an Animal Crossing New Leaf crossover.

This was a ‘AHA!!’ moment for me. While AJ’s heart is with applebucking and the Apple family, she does have skills to become a leader figure like a mayor. I hadn’t given it much thoughts before, but really all the puzzle pieces fell on their place when I read this last page. Applejack is practical, caring and not afraid to stand up to anyone or any challenge no matter how big. She would also be in perfect balance with Twilight. Applejack could sometimes be a little too stubborn and headstrong and forgets to see the whole picture when it comes to organization skills. These are however strengths for Twilight, but she on the other hand is sometimes too much of a perfectionist. Making things too complicated for herself or anyone else and that’s where Applejack’s pragmatic nature comes in handy.  
AJ of course would also be the most honest political figure ever ;)
 
Man I really enjoyed this comic!

If only Gabby Gums was still in the business, perhaps we could learn about the dirty practices of the Mayor, like diverting the taxpayers money in order to get cookie jars that are above the town permitted size.

I wouldn’t mind being a politician to fuck up politics.

“Mayor…you mentioned that something motivated you to get into politics. What was it?”  
“Oh! Of course.  
I got a citation because I owned a cookie jar that was too large! Also, my first name is Mayor, so…yeah, that helped, too.”

The mandated limit on the size of cookie jars is actually due to the Honey Jar scandal fifty years ago, and the case of Poo vs Ponyville. A sordid affair if ever there was one.
