We’ll go with your idea, it sounds better.
Given his environment I would assume he is exposed to toxins daily from being submerged in swamp muck waiting for prey, so he has a resistence to toxic ponies.

Hydra may come from an environment with no ponies. Or maybe just stupid.
Other monsters have tried to eat them to. (Like the Hydra, though debatable.)
Toxins probably wouldn’t be much help against something made of wood as opposed to actual organs.
Doesn’t seem to stop some monsters. Like the Timberwolf.
Good luck actually eating an Apple though. Generations of farmers make for extremely tough muscle. If their hooves don’t break the teeth out of your head, their flesh is damn-near impossible to chew.
I don’t know about Rainbow, she might be able to pull off hiding in a blue sky environment.
Applejack and her family would certainly be low toxicity.
Oh yeah, I forgot about the “hue” factor that can throw all sorts of rules out of wack, and of course there are always bluffers like kidney snakes.
Though I think there was something regarding the colors blue and/or purple that is a particular danger sign.
So Applejack the least toxic and Rainbow the most?
Basically, if it’s bright, eye-catching, or basically would make crappy camouflage otherwise, it’s probably stronger.
I can’t seem to remember the general color rules on what colors indicate greater or lesser toxicity.
