That’s the same Granny Smith who was ready to literally bet the farm against a couple of fleabags in stripy shirts with an automagic cidermobile ten years later; it may have been medically necessary for her to let the young’uns start handlin’ the finances.
Whether she’s 11 or 14 doesn’t change much, if anything. I do have a hard time believing granny smith would let a pre-teen make decisions in vital family business, though.
I never got the impression that AJ and Mac were that old, they both seemed solidly preteen to me. By that point in the series Ashleigh Ball was deliberately voicing Applejack with a huskier and lower voice, and Youngerjack definitely sounded squeaky and pre-adolescent to me.
AB being absent was always a silly thing to harp on anyway, since she would have been a wee sprout at the time and likely confined to the house to keep her from trying to explore the Everfree on her own.

The first three seasons continuity is terrible, season 4 smoothed it out a bit and it’s improved since then so I don’t know what you’re talking about.
The continuity of The Simpsons is not like that of FiM. Or at least not what the FiM continuity used to be. They constantly make blatant references to past episodes, Silver Quill even makes it a running gag in his reviews. In more recent years, it’s been all over the place.
The inbred headcanon? You’ve still got a chance with Granny Smith’ memory being in error. Memories get fuzzy with age, as is particularly evident with the errors in this flashback and in Granny’s statements.
I have always thought that’s the most reasonable answer

There’s also the fact that a huge number of fans seem incapable of parsing the difference between “a character onscreen says a thing happened” and “a thing actually happened in-universe”; Trixie calls herself Great And Powerful all the ding-dong time, but you’re risking having your roof torn off by a cranky star bear baby if you take her word at face value. When we see a flashback as narrated by a character, we’re not seeing events as they actually unfolded in-universe, we’re seeing events as that character interpreted them, filtered through their own memories, none of which necessarily has any bearing whatsoever on the “reality” of the situation.
