I actually did that freezer trick once, and in that instance it seemed to work for exactly that one purpose: pulling the data off.

No, to get them working again! In the Bad Old Days, the spindle or actuator bearings would occasionally get stuck, and a judicious whack could get it working again. Until it was shut down again, of course.
 
This is why the legend of “stick your failed hard drive in the freezer overnight to get it working again” was born, but in that method, the temperature change (and thus material contraction) was sometimes enough to allow the bearings to move freely. The trick was that you had to immediately make an image of the data on it, before the heat caused the bearings to seize again, or the motor would draw too much current, trying to keep the spindle spinning.
