As far as male to female distinctions…cock and hen is what we always get with birds. Or drake for boy ducks.

I’ve tried Googling a historical reference. I came up with nothing.

If what I know to be true, I believe baby Griffons are called “Kits.” Don’t take my word on it, I just think that’s correct.
