The Caviar for rich ponies is Beluga Caviar that is very expensive than any other sturgeon caviars because Beluga Sturgeon are endangered species  
Sterlet,Keluga,American osetra,ossetra,siberian sturgeon and kavruga are the only cheapest so wanna buy a non-beluga caviar AJ or a salmon caviars it’s also cheap

In my headcannon, fish are fair game. In fact, I can even imagine pegasi eating fish themselves. I just assume that ponies have much more ‘humane’ methods of harvesting fish.
 
On a side note, Pinkie’s cabinet looks sad.

Fish seem to be fair game– that’s a joke, son, I say a joke, yer suppose-ta laugh– so I’ve always figured they catch them anyway to use as pet food for cats and dogs; no reason they wouldn’t work the caviar and eat it same as they eat hen’s eggs.

They probably just ask the female sturgeons nicely.

This is actually something for the forums.

I think one of the episodes had steak or roasted chicken on the table, if it’s true, I see no problem with caviar (except I can’t stand it).

Given that we’ve seen ponies actually fishing in general and implicitly killing fish to provide feed to animals in particular… I’d say that there’s no reason why they wouldn’t process and eat caviar. Like, they’re already going to have dead fish on their hooves, so why not?
 
Not even getting into the fact that there may be efficient ways to harvest caviar without killing sturgeons or performing any kind of surgery in the real world, let alone Equestria and its advanced, magical animal husbandry.

Well, We’ve seen Fluttershy, The Pony whose Talent IS animals, taking fish and worms and feeding them to other creatures. (The opening of Dragonshy) I feel that the ponies, since they appear to have little/no problems with other animals being carnivores, wouldn’t have a large stigma about obtaining Caviar by some means.
 
I do see a bit of problem in trying to get it. It is a bit hard to imagine them killing animals for their own food use, rather than just helping other creatures eat.
 
Perhaps, such as with the example I mentioned earlier: Fluttershy had a basket of fish to feed the animals. Maybe ponies do catch and make meat food for other creatures. And they could obtain Caviar by taking it from the fish they’re catching for other animals?

Speaking of eggs, don’t forget Pinkie munching some quiche back in S1 (uses eggs like an omelette in a pie crust).
 
If you’re really going to nitpick over show lore, consider how salt lick was treated and how salty caviar tends to be.
 
And that surgery to remove the fish eggs would probably have to involve some delicate magic to both extract it through a small hole (pure knifework would either get too little or do too much damage) and handle the eggs without damaging them.
