And why don’t the writers write more of Twilight and Applejack interacting one on one then? Because there is nowhere near the same amount of chemistry between them. Which goes exactly back to what I said about Rarity and Applejack having a certain spark to all of their interactions that many people find appealing, including the writers (which is why they continue to write them together, obviously the writing team doesn’t have a problem with shaking things up and doing unexpected things or taking risks with the characters so it has nothing to do with being stuck in a comfort zone) and that gives many people the desire to pair them together romantically as well as platonically.
You asked why this ship has gotten popular, and I answered you. You may not like the pairing or need to ship it yourself but that doesn’t change the fact that many people do, more than Twijack if the amount of fan content is any indication. And the points listed previously are among the reasons why for many people.

No they don’t.
The problem is that Twilight and Applejack haven’t had any time given to their interaction since Applebuck Season. Rarity and Applejack banter–like Rainbow and Pinkie’s–feels more familiar to the writers by this point. So I doubt they want to take off that warm glove.

Rarijack has definite passion… even people who don’t ship them notice and can admit there is a certain sort of tension and charge to their interactions. They seem drawn to each other despite their differences and the fact they argue a lot. This coupled with the fact that they are paired together so much in everything and have noticeably grown closer over time are the main reasons the ship has gotten popular.
But Rarity and Applejack have more of that “passion”, you know what I mean?
