I don’t see how a horse is really any different then say cattle. I think we can all agree though that you shouldn’t eat a (pastel) pony.

In general, the “best” meat is from the largest muscle group that does the least amount of work, because that has the least connective tissue; in quadrupeds that’s the loin primal along the spine, which is where cuts like sirloin, tenderloin, porterhouse, ribeye, prime rib, and filet mignon come from. Mileage varies, of course, since those cuts are lousy for applications like barbecue, stew, or fajitas, which require more fat and/or connective tissue. The rump is the ham, which is best for smoking and low, slow cooking methods.

I actually read what you wrote as anal rather than analingus, I actually don’t want to do the latter. xD The former would make more sense since because “meat” and “in rump”…in innuendo would mean anal.
