It makes since the price is so high. Ponies are typically vegan, so meat is rarely seen, and when it is sold, the processes of harvesting and butchering are done by a very small class of highly-trained butchers. It’s a thankless job; ponies look down on butchers and slaughterers. But there is a small but steady customer base, who have to pay through the nose because of the difficulties in selling meat at all.
