The omission of “earth pony” from Celestia’s and Luna’s classification is clearly just an error, like Chrysalis’s card referring to Applejack as “Apple Jack” or Steven Magnet’s card referring to him as a “Sea Serpent” when he clearly lives in the river, and more resembles an Eastern dragon than a serpent.
 
It’s an easy and common mistake to make, and the merch is made by a different team by the show.

I need to find the source of that, but I believe she did say that. This interpretation also adds depth to the message of diversity from Hearth’s Warming Eve.
 
That said, Hasbro does like to refer to them as “pegasus unicorns,” so it is in line with current Hasbro!Canon.

@Battle GT I’m sure they just wanted the cards to not seem to be too powerful. It’s probably the same reason why they used the Season 1 Luna.
