Her crush on him started after he helped her out while she was stuck as a human, and was enamoured by his gentlemanly nature and how Silver Chariot reflected his knightly tendencies.
 
(I imagine her having a bit of fondness for knightly sorts of things because of her dreaming she was a princess and because of her being part of the pony guard in the Nightmare Rarity arc in the comics.)
 
Her adoration for him grew when she saw his more silly and fun side, and was amused at how someone who initially appeared to have a good composure could rival her in how clumsy he could be; be it bathroom shenanigans or accidentally tripping into an enemy Stand battle.
 
It didn’t matter that he was a human outside of her normal realm, all that mattered was how he captured her heart.
