When using mom/mum/dad as a substitute for a person’s name, you capitalize it.
When using mom/mum/dad with a possessive noun/pronoun before it, you don’t.
What’s the point ? I’d never do that myself for any reason.

In this case “over the top” means when one character is trailing off a sentence. That’s usually exactly when someone will cut in because showing a reluctance to talk usually means you’re done with what you wanted to say.

welp. I didn’t even knew the em dash was a thing. I don’t even know if I can get that done writing it in photoshop. So any case I will just go with a dash and with the context things should be clear.

Em dash is what you want for a sudden stop. Basically a normal dash but a bit longer.

As for ellipses, they are used when trailing off, which 99% of the time in a real conversation would result in someone else talking. They tend to get insanely overused in fanfiction, because people think that hesitation is cute, and no one would ever talk over their protagonist. :)
