I have heard the claim that this particular type of sausage was invented in Frankfurt or possibly Vienna in the late 19th Century.
 
I know that some brands of “hot dogs” sold in the US are marketed as “frankfurters,” and some as “viennas.” There are also somewhat similar sausages available canned in little tins of chicken stock, “vienna sausages.”
 
The spices that flavor them, at least in the US, tend to be very similar to those in “bologna” type sausage.
 
What they remind me of the most, though, when I think of smallish sausages eaten on a bun with mustard, is Weisswurst. Austria and southern Germany have lots of traditional sausages, some of which enjoy some popularity in North America. Though, perhaps unfortunately, because (at least in the US) chicken is less expensive then pork or beef, “hot dogs” and related items tend to contain more chicken than anything else. Even cold cuts. Even kielbasa/kubasa are made from chicken now.
 
None of which changes the fact that Flutterbutter probably wouldn’t eat that if she knew exactly what it was, but that is, I suppose, the joke.

Well, there are other claims that the term “hot dog” may come from the 19th century slang for sausage (dog), because they were thought to contain dog flesh; considering that in the early 20th century that it was legal to eat dog meat in Germany, their suspicions were understandably justified
