“Sapphirus” doesn’t mean “blue” in Latin, it means “sapphire.” It’s a loan from Greek σάπφειρος, which also meant “sapphire” (or some other precious stone). The Greek word itself is a loan from a Semitic language, like Hebrew, where it was also the name of a stone and was in turn probably borrowed from an Indo-Aryan language, like Sanskrit śanipriya “sacred to Shani.” At no point did it mean “blue.”

It’s true. Such gems with chromium include rubies, emeralds, and kyanite. Some gems don’t have as much chromium as rubies.

Which is what makes rubies red. Sapphires do not have chromium, hence them being not-red.
