I think Scootaloo was the first one, so it has that. Plus she has the whole “Pegasus who can’t fly” thing plus her wings sorta adds resemblance to a chicken. But most of all it just stuck, so that’s what we got.

Why does no one ever do a “Granny Smith is a chicken” joke? Heck, Pinkie Pie was dressed as a chicken for a full episode, but the only chicken jokes we get with her are about mistaking her for Scootaloo.
 
Not that I have a burning hatred of Scootachicken jokes or anything, just wondering why the others are literally never used.
