Plants taste spicy because they are using a chemical (capsaicin) to discourage animals from eating them. The animals immune to this are birds, which they want to be eaten by to spread their seeds (in poop).
 
Fluttershy and Rainbow both have the highest tolerance because pegasi dont taste spicy food at all!

Hmm, I would actually switch Rainbow Dash and Rarity though part of the reason for that is that I subscribe to the theory that Unicorns generally have the most sensitive sense of taste of the three main types

Dash would prolly be above rarity.  
While Rarity would have a more varied and experienced palate, Dash would enjoy foods with more ‘heat’ to them then Rarity.

My headcanon is that Twilight has a very high tolerance as a result of Spike’s cooking. The extension of that headcanon is that the less resilient of the M6 have learned to avoid taco nights at the library to avoid the world of pain they found themselves in when they visited the bathroom the first the morning.
