It’s often a matter of survival. There’s not even a future for you where you might suffer from the radiation, if you definitely die now of starvation.

Although people are still living mostly in areas where there were settlements pre-war the old infrastructures, workforces and technologies which let them all stay well-fed are largely gone. There’s often just what individuals’ skills or caps and the local land can provide, which can be very iffy. Pre-war foodstuffs are relatively plentiful, obviously keep forever, and require no skills to create or prepare because those steps were already been done more than a century ago. Most folks would have grown up used to eating it at least sometimes and thought of it as normal. And many wouldn’t have a Geiger counter to check their food with even if they felt like it, so to them it’d be unremarkable.

If the radiation threat mechanic wasn’t so key in Fallout, it wouldn’t be so much of a problem as long as people didn’t overdo it. Rather low roentgen dosing wouldn’t just pile up in your system… your body would flush out the contaminated materials and be able to heal any damage.

I don’t understand why people would eat/drink food that’s tainted in radiation.
