I think it’s pretty rare to get it from that now days, I hear it’s often derived from wood pulp now.

Apparently the artificial stuff is just pure vanillin, and if you bake with vanilla extract, the only flavor compound that’s left is also just vanillin. I haven’t tested if there’s a flavor difference myself.

Vanilla extract is way better for icecream though!

Most artificial vanilla is made in the lab. Fortunately the primarily flavorant in real vanilla is the vanillin molecule, so the taste is easy to replicate compared to other more complex flavors that need a mix of different molecules.

I’ve had Kopi Luwak. It was decent, but not really worth the price. The seller swore it came from a cage-free free roaming estate and the civets were treated like pets. I hope that was true.
