As someone who actually cooks, I find this recipe rather bad. Half a cup of butter is two sticks - with only one quart of broth?

You’re better off halving that to 1/4 of a cup each, or 4 tablespoons, of butter and flour each, and just reducing the gravy to desired thickness instead of relying on the roux outright. If you put too much fat in gravy, it starts tasting more like butter than gravy, and that’s just gross.
