The other typical plan for blue is to go for air superiority or other forms of overwhelming your opponent with hard- or impossible-to-block creatures. Ideally while drawing cards or otherwise getting value for hitting them in the face. Rarity can actually help with that. After all, a creature with protection from a color can’t be blocked by creature of that color. Still, generally best to keep her back for defensive purposes.

I’ve played blue n stuff before, I have a blue Emry EDH deck that is meannn. But I always feel bad about using counterspells, or feel like I counter the wrong stuff.

The simplest way to explain is it this: Blue does not actually want to play magic the gathering. Blue wants to sit in a corner and jerk off draw cards. You need to know what your opponent is doing to maximise the effectiveness of dunking on their shenanigans and convince them to go away and stop playing.
 
Edit: Also, the suggested most useful toy to keep around and use with her ability is Rainbow Dash (green, blue, red) in a maid outfit (black, white). Do with this information as you will.
