The show creators have acknowledged us on multiple occasions, least of which was coming to conventions. Mathematically, the odds that we just happened to like stuff they just happened to insert isn't very probable. It is very much more likely they were fully aware, and brought us content that they knew would be liked, and several pieces of content only we would really understand as references.
One reason I can support this is because I watch and look into other cartoon series that Hasbro lords over, and that sort of stuff simply doesn't show up. The exact same voice roles, exact same animators, producers, directors, musicians, they just don't put in the same effort as they did in MLP.
BUT all that said, the Hasbro overlords are a completely different entity from the show's creators. In fact, Hasbro is prone to the sin we call as a trope, "corporate meddling", where they step in and stop the show's creativity team from doing something sensible in favor of what they think will make them (or save them) more money.
