Most of the standard human beings who trained and fought alongside Goku in DBZ now in Super these days are easily planet buster level. Tien, Krillin, even though he's a running gag/joke Yamcha too. It really depends on the situation, if Sunset was able to train and acclimate to fighting alongside Goku and the others during DBZ. I can easily see her be on par with the 3 I mentioned, maybe even stronger those 3 with the Unicorn magic helping her out. I don't think she'd be able to get stronger than the saiyans though, maybe if she kept at it while teen Gohan was focusing on high school she probably could have been equal or stronger than base Goten and Trunks.
 
It really depends on the perspective of one's headcannon and how far they're willing to push Sunset.
